Good Life Cake: A Summer Citrus and Green Tea Cake

A few days ago, I had the amazing idea of making a green tea cake. I thoroughly enjoy sipping on my iced tea during the summer time and I have a special spot in my heart for lemon and citrus flavored desserts. There’s something about the mix of sweet and tart that just makes the taste buds explode with happiness and summertime cheer. Combining both the refreshing idea of tea and the refreshing idea of a citrus dessert into one was something I absolutely felt compelled to accomplish, and I finally did that this afternoon. Parmesan Squash Tots

I woke up today feeling an incredible sense of nostalgia. Growing up, tator tots were definitely one of my favorite foods. I loved grilled cheese day at school because with the grilled cheese came a side of tator tots and I would always sneak a giant cookie with it to complete the perfect meal, despite my mother saying that we could only get a treat on Fridays. I took it upon myself to treat myself more than once a week when glorious tator tots were being served with my lunch. The problem with tator tots though, is that they are already far from healthy, and are an unhealthy treat in themselves. That is, unless you opt to make a healthy, homemade, great tasting alternative to the classic tator tot.

Tomato and Corn Salad with Spicy Avocado Dressing

Alright…It’s time to confess. I have a major obsession with avocado. Not only is it good for you, but it’s absolutely delicious and it can be used in so many different ways. It can be used in breads, puddings, smoothies, dips (obviously…guacamole!), dressings, and I’ve even made pierogi out of it! It’s an incredibly versatile fruit…vegetable? I’ll leave that up to you.

The Guacamole Burger

I was sitting around lazily with my boyfriend (also known as my kitchen secretary because being known as a “kitchen aid” isn’t very meaningful) when it occurred to me that my avocados were sitting on the table slowly creeping up on becoming too old to use. I went into the kitchen thinking that I was going to make an avocado dip for crackers (via my kitchen secretary’s advice), but instead, as he was struggling to figure out how to make burgers out of the organic beef we had in our refrigerator, a new idea came to mind. The Guacamole Burger!
